La Cave

We make a strict piecemeal selection
to optimize the quality of each plot.
White wines and rosé are produced
in direct pressing with a controlled fermentation temperature
between 15 and 17°.
Red wines are vinified in a traditional way :
in stainless steel or concrete tanks.
We extract the colour and tannins
with removals and offloading.
The different grape varieties
are vinified separately and then assembled.
